Coffee Ice Cream

The robust flavor of Dark Roast Organic Park Drive beans stands up wonderfully to the richness of cream, creating an ice cream with pronounced coffee flavor.

Ingredients:

  • 2 cups heavy cream

  • 1 cup whole milk

  • 1/2 cup Dark Roast Organic Park Drive coffee beans, lightly crushed

  • 3/4 cup granulated sugar

  • 5 large egg yolks

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate fudge sauce (optional)

Instructions:

  1. In a medium saucepan, combine cream, milk, and coffee beans.

  2. Heat over medium until it just begins to simmer.

  3. Remove from heat, cover, and let steep for 1 hour.

  4. In a bowl, whisk together sugar, egg yolks, and salt.

  5. Reheat cream mixture to a simmer, then slowly pour about 1 cup into the egg mixture, whisking constantly.

  6. Pour the egg-cream mixture back into the saucepan.

  7. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon.

  8. Strain through a fine-mesh sieve into a clean bowl.

  9. Stir in vanilla extract and chill completely, at least 4 hours or overnight.

  10. Freeze in an ice cream maker according to manufacturer's instructions.

  11. If using fudge sauce, layer it with the ice cream as you transfer to a storage container.

  12. Freeze until firm, at least 4 hours.

This is the perfect Summer Time treat and relatively easy to make and very easy to enjoy.
